I love salads - but I'm not so fond of preparing them.  So much washing & chopping...  So I try to keep things simple.  This is my current favourite combination - modified to fit what I have on hand:
Celery, Radish & Pear Salad

Ingredients:
3 stalks of celery
5 radishes
1/4 onion
7 cherry tomatoes
1 pear 
Creamy Cucumber dressing
Methods:
1.  Chop all your veggies into bite size pieces.
Use whatever you have on hand - spinach or other salad greens are a nice addition.  Any type of onion is good, but optional; the tomatoes are also optional.
2.  Mix together with the dressing.
This is what I used - it complemented the bite of the onion & radish as well as the sweetness of the pear perfectly!  Makes about 2 - 4 servings.

Ahh, me too Uli. I love salad, but what a pain! This looks good. My current fave is spinach, chickpeas, tuna, some parmesan, and italian dressing! Very little chopping.

ReplyDeleteI love salads also! When I go to the market on Saturdays, I come home, chop everything and put them in storage containers so everything is cut for the week!
